>Oxtail terrine with foie gras, meat juice dressing and Xérès, confit shallots with wasabi.
>"Hawaiian" poke with salmon marinated in sesame oil and wakame, rice with lemongrass and crunchy vegetables.
>Creamy "Sainte Maure" goat cheese smoked in hay, red beets, christophines in Raspberry vinegar and maple syrup, buckwheat crunchy tile.
>Warm veal tongue carpaccio, « head » crispy, gribiche sauce with Niora pepper and tailed capers.
>Snacked langoustines, daikon ravioles and pak choï with sea urchins, emulsion with kalamansi and Timut pepper. (+6€)
