>Spring roll with "mint-coriander" crunchy vegetables and tea - smoked mackerel fillet with Thai dressing.
>Soubressade empanadillas with brousse cheese and sweet peppers piperade, rucola pesto with a bear leek.
>Creamy gorgonzola, blinis and eringiis, eggplant chips, roasted sesame light cream.
>Rocks fish soupe flavored with badiane, fennel with cockle juice, and foccacia with "Nori" seaweed.
>Just warmed white asparagus with parmesan cheese, candied chicken oyster, green pea coulis with wasabi and crispy tuile with "black pearl" curry (+5 €)

>Low heat cooked guinea fowl brast, peanuts butter and tamarind, green cabbage fondue with sultanas.
>Cod fish cooked « a la plancha », spinach and tomato confit with pine nuts, bouillabaisse juice emulsion.
>Pan-fried angus beef flank steak, Agria potatoes mashed with ciboule, confit of shallots and juice with Sansho pepper.
>Roasted burbot, Lomo with Espelette pepper ; snacked, crispy and creamy sweet potatoes and dressing with Brittany honey and mustard seed, cuttlefish ink juice (+ 8€).
>"Tajine style" rabbit leg in a casserole, bulgur with dates, juice with candied lemons and cumin.
