>Sea bream fillet marinated with pink peppercorn and orange zest, radish pickles, zucchini tagliatelle and emulsified Campari cream.
>Heirloom tomatoes with white balsamic, green olives pesto, ricotta with thyme flower and grilled coppa.
>Cold fennel soup with tarragon, beetroot tartar with "bouchot" mussels, corn espuma.
>Rump of veal just snacked, "lemon-ginger" condiment, goat’s curd with melissa mint and crunchy tile with hazelnuts. (+4€)
>Thin tart "pissaladière", pequillos and pink shrimps with sumac seeds, anchoïade sauce.

>Basque Pork chop from "Abotia farm", apricot chutney, mashed potato with vanilla oil, juice with coconut milk.
